‘X’
A well balanced cocktail, with a touch of blueberry and a slightly tangy finish. We mix Russian Standard Platinum Vodka with Aperol, Creme de Cassis, Pink Grapefruit Juice and Lemon Juice.
‘Y’
Twisted from the Vodka Gimlet, we take a generous measure of Russian Standard Platinum Vodka and mix it with French Ginger Liquor, Sweet Chilli Gomme and Lime Juice with a dash of Angostura Bitters. Served long and topped with soda, this is a drink with bite.

APEROL SPRITZ
A tantalising Apèritif style drink of Aperol, Sparkling Wine and a splash of Soda Water, served on the rocks with a wedge of Orange. Light and zesty with a lasting effervescence that carries a long finish on the palette.
DERBY COCKTAIL
Named after the famous Kentucky Derby, we use Ted Haigh's version from Vintage Spirits and Forgotten Classics. A decadent potion of Makers Mark Bourbon, Martini Rosso, Grand Marnier, Lime Juice and a single Mint Leaf which we shake and serve straight up in a Coupette Glass with a Mint Leaf floating on top to garnish.
MARTINEZ
Arguably the Great-Grandfather of the modern Martini, this drink first appeared in cocktail books shortly before the turn of the 19th century. We take a healthy dose of Plymouth Gin and stir it down with Martini Rosso Sweet Vermouth, Maraschino Liqueur and dashes of Orange Bitters. Served straight up in a chilled cocktail glass and garnished with a lemon twist.
HEMINGWAY DAIQUIRI
Or El Papa Doble as it was originally known, this drink was created and named for the famous author during one of his many visits to Cuba at the time of Prohibition. An exquisitely balanced drink containing a large pour of Havana Club Blanco Rum, Maraschino Liqueur, Pink Grapefruit Juice, Lime Juice and just a splash of Gomme. Served straight up in a cocktail glass and garnished with a Lime Wheel, this drink will get the party started.
OLD CUBAN
A delightful neo-classic cocktail which in essence is a Mojito with Sparkling Wine on top. We start with a double measure of Appleton V/X Rum and then add Lime Juice, Brown Sugar Syrup and Mint. It is all shaken and then strained into a cocktail glass and topped with Sparkling Wine. A floating Mint Leaf finishes.

SIDECAR NAMED DESIRE
Created by Angus Winchester, the ‘playboy bartender’, this twist on the classic is a rich, well balanced and slightly spicy drink. We mix Hennessy VS Cognac with French Gginger Liqueur, Lemon Juice and a splash of Gomme. We then serve it straight up in a cocktail glass with a sugar rim.
DREAMY DORINI SMOKING MARTINI
Created in New York by Audrey Saunders, the libation queen, this is a crisp, dry Russian Standard Imperial which we ‘burn’ with just a touch of one of the smokiest Islay Scotch’s – Laphroaig. It is perfected with a Lemon Twist to add a light citrus touch to complement.
APPLEJACK RABBIT
Created by Harry Craddock, author of the Savoy Cocktail Guide, this neo-classic cocktail takes a generous measure of Calvados (a French Apple Brandy), Orange Juice, Lemon Juice and Maple Syrup. It’s served straight up in a cocktail glass and garnished with a sugar rim and is perfect for those who like something sweeter with a slightly zesty finish.
PALOMA
As it is in Mexico, so shall it be at x&y bar in Brisbane. In South America this drink is more popular than the Margarita. A refreshing mixture of Herradura Blanco Tequila, Agave Nectar, Fresh Lime Juice, Pink Grapefruit Juice and topped with Soda Water. It is then served tall with a salt rim and a Lime Wheel.
CAMERON BRIDGE COBBLER
Named for the distillery in which the Johnnie Walker Scotch Whisky is made, this fruit-heavy drink is made of fresh Orange, Lemon, Peach and Maraschino Cherries muddled together and balanced with a few fingers of Johnnie Walker Black Label Scotch, Punt E Mes, Fee Brothers Whisky Barrel Bitters and Maple Syrup. Served over crushed ice with Orange and Peach wedges to garnish.
ROYAL WIBBLE
Based upon the drink created by Dick Bradsell, it consists of Plymouth Gin, Plymouth Sloe Gin, a French Blackberry Liqueur, Pink Grapefruit Juice, Lemon Juice and a splash of Gomme. We then twist the drink slightly by serving it tall over crushed ice and topping with Sparkling Wine, with a Pink Grapefruit wedge garnish. It's a drink everyone will love.

CLOCKWORK ORANGE
Created for the 1st birthday of 1 Degree in 2006, this is a favourite of our bartenders. We mix Plymouth Gin, Aperol, French Peach Liqueur, Lemon Juice, Passionfruit Pulp and Gomme. Served straight up and garnished with a flamed Orange Zest, this drink has a taste reminiscent of Orange Sherbet.
TEQUILIEROS TREACLE
A fairly simple twist on the classic treacle, we use a large pour of Herradura Anejo Tequila, a couple of dashes of Orange Bitters and Gomme, which we stir down old-fashioned style and drizzle a small amount of Pink Grapefruit juice. Served short and garnished with a Pink Grapefruit twist, this is an absolute must try for Tequila aficionados.
FRENCH MANHATTAN
A sweeter and fruitier version of the classic Manhattan, this drink is stirred down with a long pour of Makers Mark Bourbon, Orange Bitters and French Blackberry Liqueur instead of the regular Vermouth. It is then served short over cubed ice and garnished with a flamed Orange Zest.
ESCORT
Bastardized from an adaptation of the French Martini, we find this to be a far more interesting drink than its predecessor. We combine equal parts of Russian Standard Platinum Vodka, Cointreau and a French Blackberry Liqueur with cloudy Apple Juice and a dash of Lime Juice. Served straight up in a cocktail glass and garnished with a flamed Orange Zest.
APPLESINTHE
This is designed for those who like a bit more bite to their poison, but still enjoy a well balanced and interesting drink. La Fee Bohemian Absinthe, French Apple Liqueur, cloudy Apple Juice, Lemon Juice and Passionfruit Pulp combine to make a drink that will satisfy the most demanding of palettes.

HOT BUTTERED RUM
A rich and spicy concoction, perfect for the colder nights. We use Mt Gay Eclipse, Bacardi 8, Gomme, whole Cloves, crushed Cinnamon and a small square of butter which we then blaze and serve straight in a brandy balloon. Garnished with a pinch of Nutmeg.
HIGH TEA
Purely for the love of blazers. A healthy dose of Hendricks Gin meets Aperol, French Peach Liqueur, Pink Grapefruit Juice, Lemon Juice, Honey and Peach Bitters which is blazed back and forth and then served in a teacup with a Pink Grapefruit Twist. Surprisingly different.
